VINEYARD NOTES
Grown in the arid rain shadow of the Cascade Mountains this Horse Heaven Hills of the Columbia Valley Cabernet was harvested at 25 brix and an acidity of 4.5 grams/Liter.
PRODUCTION NOTES
Pulled from a tank of freshly crushed Cabernet Sauvignon grapes, this "white cab" juice was fermented in stainless steel for minimal impact until dry. This wine was sweetened back with Cabernet Sauvignon juice held over prior to ferment.
WINEMAKER NOTES
Every once in a while you get a great unexpected surprise. Like being shipped more grapes than you had planned for! That is what happened with our Cabernet Sauvignon this year. As we destemmed and crushed the fresh fruit it was sent to tank and we quickly realized it wasn't all going to fit. When life gives you lemons...make a rose! So that is what we did, we pulled off about 80 liters of fresh Cabernet juice to another tank for this special release White Cab. For this particular grape, this vintage was sugar ripe when we recieved it but it had not processed all of its underripe flavors before picking. Many environmental aspects go into this, but it creates its own great and unique flavor. Often seen as pepper or jalepeno these notes mix wonderfully with the cherry and ripe red fruit flavors of this special release. This is the perfect example of the beauty of small batch winemaking, the vintages are all different and each tell their own story that won't ever be quite the same again. Enjoy!
