Take a peek into our winemaking process.
-
01 Regenerative Roots
Our process begins in our Loveland vineyard with old, hardy grape varieties chosen to thrive in Colorado’s climate. We use regenerative agriculture — no pesticides, no synthetic fertilizers — creating strong, resilient vines naturally.
-
02 Building Living Soil
Healthy grapes start with healthy soil.
We enrich our vineyard with organic compost in the fall and compost tea throughout the year.
Instead of feeding the plant directly, we grow the soil microbiology — encouraging beneficial fungal root growth, balancing bacterial mycorrhizae, and supporting healthy nematode populations. -
03 Biodiversity in Action
We practice no-till farming with biannual cover crop rotations and green mulch to protect soil health.
Lavender, bee balm, yarrow, and companion plantings attract beneficial predatory insects.
Worm castings and live roots naturally aerate the soil and build long-term vitality. -
04 Thoughtful Harvest
We don’t guess when it’s time.
Harvest is determined through testing and tasting — measuring sugar levels, acidity, and phenolic development to ensure ideal ripeness before grapes move to the winery. -
05 Modern Craftsmanship
Once at the winery, grapes are destemmed and crushed using our processing machines.
White grapes are pressed immediately into juice.
Red grapes ferment with skins intact for color, structure, and depth.(Yes — we’ve even done foot stomping before. And yes, it made fantastic Syrah!)
-
06 Guided Fermentation
Fermentation is carefully managed based on the style of wine we’re crafting.
We control temperature, yeast nutrition, oxygen exposure, and chemistry to develop balance and character. -
07 Barrel Aging & Development
White wines settle before bottling.
Red wines move into barrel for secondary fermentation and aging, allowing tannins to soften and flavors to deepen as oak and wine integrate beautifully over time. -
08 From Bottle to You
After aging, wines are bottled and shared.
You can enjoy Winery 5280 wines at local restaurants, event venues, stores, through our Wine Club, or directly from us.From regenerative vineyard practices to careful fermentation and aging — every bottle is intentionally grown, crafted, and cared for.
