VINEYARD NOTES
Grown in the Columbia Valley of Washington state and harvested at 21 Brix and an acidity of 6.5 grams/Liter to keep this wine crisp and light.
PRODUCTION NOTES
Destemmed, crushed and pressed on day 1 and fermented with sweet acacia wood until dry. Sweetened back with Sauvignon juice held back before fermentation
WINEMAKER NOTES
We hope you enjoy this Sauvignon Blanc as much as we did driving its production style. We left the usual New Zealand style of Sauv Blanc behind and instead of focusing on aromatics of overly ripe guava and papaya, we focused on a warmer style of apple, pear, and grapefruit with some of that passion fruit still showing through. We steered toward this warmer style to match the warmth of the acacia wood. Acacia has a great history with Sauvignon Blanc where the floral elements of the acacia work to bring out a sweetness and different set of aromas from the grapes than without. This often isn't utilized much by winemakers due to different styles being more common, but creates a crisp and warm wine that is great with dinner or with just sitting by the fire.
